One Girl’s Tech: Digital Meal Planning

Disclaimer: I began writing this blog post back in December 2017, almost TWO YEARS AGO.  Some of the process has changed, but overall the concept is still the same.  It’s fun to see how the process has evolved over the last couple years!

Most of the time when I tell people I cook 6-7 nights a week the first question they ask is HOW???  My answer is always the same:  meal planning!

I learned a long time ago that meal planning is essential in the struggle against ordering pizza and Chinese every night.  Another essential is food prep, but that’s a topic for a different blog post.

I’ve been through several forms of meal planning…making a list, writing the meals I want to make in a calendar, determining different themes for different days…but my all time favorite way to meal plan is to enter all my meals into their own calendar on my Google calendar.  This way I have my plan with me wherever I go!

This was my meal plan for December 2017.  Each week, usually on Saturdays or Sundays, I sit with my computer, perhaps a couple cookbooks, and my Pinterest board and create “the plan”.  When I choose the meal for that day, I look to see if I have anything planned that might affect dinner prep (birthday parties, dinners out, my work schedule [I work late one day a week typically], etc).  That will help me decide what type of meal I need to pick for that day.

For example, if I know we are going to be out most of the day but be home for dinner, I might make something that can be quickly thrown together like sandwiches or something that will cook all day like a slow cooker meal.  If it’s a night I’ll be away from the house and Jeff will need to cook for the boys, I usually choose something that can be cooked ahead of time (sloppy joes, lasagna) or something I know Jeff can make like meatball subs.

If it’s a Sunday with not a lot going on or a day I know I’ll be home earlier than usual from work, I might pick something that takes a little longer to prepare.  We try to eat between 6P-7P each night, so I keep that in mind when I pick the recipes.

That’s as far as I got in 2017, but for the most part the process after is the same.  Here’s the updated version:

I still use Google Calendar to meal plan.  It’s the most efficient way for me to see what’s on my calendar for a given week and plan my meals around events.  I am also able to see the kind of protein I’m using, so I can hopefully avoid too many nights of chicken in a row.  You’ll see in the calendar below, I had a “Mom’s Meeting” (a girls’ night basically) on 11/14, so I planned Crock Pot Lasagna, a dish I can start early in the morning and be ready for the boys when they want dinner.  

One thing that’s changed now is that I not only plan out my dinners on Google Calendar, but also my breakfasts and lunches! I just find it easier to lay everything out so when I’m meal prepping on Sundays, I can go through the list almost as if it’s a checklist. You’ll notice for the breakfasts (light blue) and lunches (bright blue) below, I pick one or two meals to alternate for each course. I used to pick one breakfast and one lunch, but I found myself getting tired of those foods by Wednesday or Thursday and opting to buy foods out. As I’m on both a budget and a diet currently, that’s not really something that works for me.

Once I have my meals entered into my calendar, I can make my shopping list, which has also changed very recently! I’ve used a couple list making apps in the past (GroceryIQ and Out of Milk). Both are great, but recently I’ve been making my list straight in the Walmart Grocery app! Did you know they have free pick up all the time?! I used to hate Walmart, but I decided to give them another try recently and I’m pleasantly surprised! They’re cheaper than Kroger, the food quality (from what I can tell so far) is just as good, and they have FREE pickup! Until I have an issue, I’m sold!

My Google Calendar is my life preserver. It is with me all the time and I can easily reference it when I can’t remember what’s for dinner, if I have an idea for a Sunday night meal down the road, or to remind me of that really great meal I had a couple months ago. Without this platform, I have no idea how I’d get by! If you’re struggling with meal planning, I suggest you try this out.

Start small…pick a couple meals per week to enter on your calendar. If you know you’re going out to dinner, enter those first. If there’s a holiday (like Thanksgiving, which is coming up next week), enter that too! Once you start entering things you already know are happening, it makes meal planning easier. Don’t forget to add in leftover nights if your family eats them! I usually plan a meal for each night and take the leftovers for lunch. Or in some cases, I’ll be so tired when I get home, I’ll declare it a “fend for yourself” night. When that happens, I move that night’s meal to a day on the following week so I don’t waste food. That’s why you see some nights with nothing on them:

I hope this inspires you to create your own meal plan. If digital isn’t your thing, try a calendar or planner! I started with a thin, monthly planner I would pull out each week to plan, but I never had it with me when inspiration struck! Or I’d be sitting at work thinking “I can’t remember what we are having for dinner tonight”. Having everything in Google, I’m able to reference it anytime, anywhere. Good luck planning!

Meal Plan for 10/4-10/10

We’ve gotten in a routine at our house.  Since I’ve taken a job as a store manager, I am lucky enough to get most nights and weekends off.  If you’ve ever worked retail, you know how rare this is.

At my job, we get to pick two Saturdays a month that we want to take completely off.  The other Saturdays we have to work a short, four hour shift.  Because of this, I tend to do most of my meal planning, grocery shopping, and recipe prep on Sundays.

Typically, I make my meal plan either Saturday night or early Sunday morning.  Then I add all my ingredients I need to pick up to my GroceryIQ app on my phone (love this thing btw) and try to get to the store by 10A.  Our Kroger is packed by 10:30A, so the earlier I get out there, the better.

I am still in the process of figuring out the best way to record all my meal planning and the results of each meal.  I’ve tried several different ways from using an app like Instagram, to Pinterest, to keeping a running, written list of meals I like.  I think I may have figured out the best way, but I haven’t actually put it in practice yet, so I’m not going to share quite yet.  If anyone has any thoughts on this, let me know.

Lately, I’ve just been making a list.  I write out the days of the week, add in any appointments, plans, events, etc, and then start filling in meals.  Since I’m a manager, I have to close one night a week (typically Thursdays), so I add that to the plan.  This coming week, I am going out with friends on Tuesday night, so that goes on there too.  This way, I can plan for my guys to have a meal Jeff can make or they can go out to eat on nights I won’t be there to cook.  Thursday night works for me to close because it’s 35¢ wing night at BW3s!

That was a long intro to tell you about the meals I have slated for this week…

Sunday – Marinated and Grilled Pork Chops with Skinnytaste Garlic Parm Roasted Fries

Monday – Waffle Crusted Chicken w/ Skewered Grilled Potatoes

Tuesday – Coneys for the boys using my City BBQ Chili recipe

Wednesday – Baked Chicken Parmesan with roasted green beans

Thursday – BW3s for the boys

Friday – Garlic Bread Chicken Nuggets with Corn Casserole

Saturday – Grilled Chicken Tacos with Cilantro Lime Rice

So that’s what’s planned for our house this week.  I’m hoping to report back with all kinds of yummy additions to my list of Must Make Again meals!

Caesar Cornflake Crusted Chicken

Continuing with the theme meals that are so prevalent on the blog lately, this dinner is another great one to have in your arsenal.  It’s quick, easy, and extremely delicious.  It’s definitely a crowd pleaser.  Throw in some rice and a veggie and you’re good to go!

Caesar Cornflake Crusted Chicken
1 pound chicken breasts, butterflied
1 cup Caesar dressing (or more if desired)
2 cups corn flakes cereal, crushed
salt and pepper

Preheat oven to 425*.  Put your Caesar dressing in a wide dish (I tend to use cake pans).  Put your crushed up corn flakes in a second dish.  Lightly spray a broiler pan or something similar (like a cooling rack set over a cookie sheet) with nonstick cooking spray.

Dredge each of your chicken breasts first in the dressing, then in the corn flakes.  Place on rack.  Repeat for all breast pieces.  Sprinkle with salt and pepper.  Bake for 30 minutes on 425*.

*You may need more dressing and/or corn flakes if you don’t have enough to cover all your pieces.

That’s it.  Simple as that!

Bowtie Pasta with Sausage Cream Sauce

Another one? In less than a week? I know…I amaze myself too.

I’ve been really trying to cook for the family lately. We all love pasta and sausage and…well…cream. So when I saw this dish, I quickly added it to my dinner plan.

This dish came together super fast and it was DELISH! Not the healthiest meal but definitely a tasty one.

Bowtie Pasta with Sausage Cream Sauce
1 box bowties
1 pound sweet Italian sausage, removed from casings
1/2 tsp crushed red pepper flake
1/2 onion, diced
3 cloves garlic, minced
1 28-oz can diced tomatoes
1/2 tsp salt
1.5 cups heavy cream
Fresh parsley, chopped (optional)
Parmesan cheese (optional)

In a large stockpot, bring water to a boil. Cook bowties according to package directions.

In another large skillet, cook sausage and red pepper over medium heat, breaking into pieces. Once cooked, add onion and garlic. Cook until onions are translucent, then add tomatoes, cream, and salt. Bring to a boil over high heat, then reduce to simmer and let bubble away while pasta cooks.

Once pasta is done, drain and add to sauce. Toss to coat, then let cook in the sauce for a minute or two. This allows the pasta to soak up some of the sauce.

To serve, top with parsley and Parmesan cheese.

Of course, the little boy only ate the pasta. I’m beginning to think he’s part vegetarian!

Mexican Chicken Thighs

What’s this?  A RECIPE??  No way.

Hello, blog world.  I’ve missed you terribly!  You guys know I’m super busy and quick, easy meals are a necessity in my life.  Well, this one couldn’t be easier.  You take some chicken, dust it with dry rub, let it sit, and then cook it.  Seriously.  It’s simple.  Try it.  Tomorrow.

Mexican Chicken Thighs
1 pound chicken thighs
1/2 packet taco seasoning
1 tbsp olive oil
1 cup salsa (or to taste)
1-1.5 cups taco cheese

Preheat oven to 400*.  Season chicken thighs with taco seasoning, really rubbing the seasoning into the thighs.  Let sit in the fridge at least one hour or overnight.  Brown chicken in olive oil over medium high heat.  Transfer chicken to a baking dish.  Cover with salsa and cheese.  Bake at 400* for 20 minutes or until chicken is cooked through.

Serve with sour cream, avocado, or any other toppings of you choice.

I served this over chicken flavored rice and it was yummy!

Also tastes great in a tortilla.

I’ve been a little…preoccupied…lately so I haven’t really been doing much cooking at home.  Therefore, I’ve been slacking with my meal ideas.  That changes today.  Here’s a couple meal ideas for you for the next week:

12/1:  Brown Sugar Meatloaf & Mashed Potatoes
12/2:  Kim’s BBQ Chicken Sandwiches & Corn

Raisins, and Garlic

12/5:  Beef Stir Fry with Snow Peas and Jasmine Rice

As I suspected, last week’s menu did not go quick as planned.  I ended up making two of the five meals I originally intended.  Whoops.  That’s the way things go in the Desjarlais household.  Oh well.  Recycling menu ideas is just some of the fun!  Here’s the next week’s potential menu!
