Grillin’ Frenzy

Carolyn was here for a visit earlier this week.  On night one, I made my Pistachio Chicken with roasted veg and some fruit.  When I asked her what I should make on night two, she suggested grilled pizza.  When my mom is visiting, she almost always requests grilled pizza.  It was the perfect night for it!

After a quick run through of the ingredients we’d need, we stopped at the store before picking the little guy up from daycare.  Once home, I gave C the task of stretching the pizza dough, a task I really hate doing (don’t as me why).

I had sliced an onion and cooked it down in a little butter so it got caramelized and delicious.  If you have time and like onions, I highly suggest doing this.  It gives your pizza another dimension you can’t normally get otherwise.

After the onions were cooked and the pizza dough stretched, we prepped the other ingredients.  If I can give you one piece of advice when making grilled pizza, it’s to have your ingredients ready to go before you step foot outside.  I also suggest using white dough as opposed to wheat, but that’s me.  I try to use whole wheat ingredients when I can, but honestly the white is just better!

So, when your dough is stretched, your ingredients prepped, and your grill is preheated, you’re ready to start.  I have made the pizza two ways:  taking all the ingredients outside and doing the entire process out there and just taking the dough outside, then bringing it back in once it’s partially cooked.  In my opinion, the second way works better.

I take the dough outside with a little dish of olive oil.  Then I brush the dough with the oil and put it, oil side down, on the grill.  Cook the dough until it’s slightly done and the lines from the grill are golden brown.  Be sure not to over cook the dough.  It will burn quickly.

Once the dough is cooked, take it off the heat and bring it inside.  Add your desired toppings.  That night, we made four different pizzas:

Jeff’s pizza-pizza sauce, large pepperoni, proscuitto, thin sliced tomatoes, basil pesto, crushed red pepper flake, parmesan cheese, thin sliced fresh mozzarella, and sun-dried tomatoes.

My traditional style pizza-pizza sauce, large pepperoni, proscuitto, caramelized onions, basil pesto, sun-dried tomatoes, parmesan cheese, torn basil leaves, and thin sliced fresh mozzarella.

Jeff and I typically have very similar pizzas as you can see.

Margherita pizza-very traditional with tomato, torn basil leaves, and fresh mozzarella.  We didn’t put pizza sauce on this one and I was kind of regretting it.  I think we did put pesto on it.

Peach & Proscuitto pizza-since it’s peach season, C and I wanted to try something with peaches.

We did thin sliced peaches, proscuitto, a bit of goat cheese, a little mozzarella, and a drizzle of the Balsamic Glaze I picked up from Trader Joe’s the last time I was there.  YUM!  C and I decided it was the best one of all of them.

This stuff is seriously good.  They suggest you “Use it on salads, as a drizzle over grilled meat and fish, or as a dessert topping for fresh, summertime berries or vanilla ice cream.”

If you’ve never tried grilled pizza, you need to.  It’s delicious and so much better than oven baked.  The fire gives the crust a nice flavor and crunchy texture.  Jeff and I grill pizza probably once every couple weeks in the summer.  It’s the perfect dinner!

Pep Talk


Every now and then, everyone needs a pep talk.  More often than not, you need to provide your own pep talk to yourself.  I don’t know about you, but getting myself to eat right and work out is a daily (sometimes hourly) struggle.  There are days (like yesterday) when all I want to do is curl up on the couch and sleep.  That’s when my inner dialogue begins:

“I really don’t want to work out.”
“But if you do, you’ll feel so much better!”
“I had such a long day at work.  I’m so tired!  And this couch feels so good…”
“You promised yourself (and Carolyn) you were going to Zumba today.”
“She’ll understand.  I bet she’s tired too.”
“You won’t lose any weight or get any good, heart healthy exercise by laying on the couch.”
“I could clean the house.  That would be exercise.”
“You and I both know you’ll SAY you’re going to clean and then you’ll get sidetracked reading blogs, watching YouTube videos, or sleeping and you won’t do it.  Quit making excuses.”
“But it’s so far away!”
“Are you kidding me?  It’s five minutes.  Plus, remember what Carolyn said…you’ve never regretted doing a workout.  You have, however, regretted NOT getting up off your butt.”
“OK, OK, you win.”

There are a million reasons I tell myself as to why I can’t, don’t want to, or shouldn’t work out, but really there is no good reason.  I mean, heck, if you can’t do anything else, just go for a walk!  It doesn’t have to be a super speedy walk.  Even just getting out and enjoying the sunshine is good enough.  Chances are, when you get dressed and get out there, you’ll go longer, harder, faster than you planned.

The other day I absolutely did not want to exercise at all.  I’m talking I was laying in bed trying to take a nap because I had gotten very little sleep the night before and had worked a full day that day.  Then Carolyn asked me if I’d walk “with” her (in spirit because we live two hours apart), so grudgingly I agreed.  Know what happened?  I ended up run/walking for 45 minutes.  I did the Couch to 5k program’s Week 1 Day 1 one and a half times!  That’s typically what happens to me.

So, when you find yourself not wanting to workout, remind yourself how great you will look and feel after!  And then GET MOVING.

But have your best friend’s number on speed dial.  Just in case.

 

 

Wild Eggs (Louisville)

My best friend, Carolyn, lives in Louisville.  Whenever I come to visit, there are always two things I must do:  visit Off Broadway Shoes and eat at Wild Eggs.

Wild Eggs is a breakfast/brunch/lunch place that I fell in immediate love with the very first time I visited.  It could have been the atmosphere, it could have been the cute little egg salt and pepper shakers, but I believe it was in fact the Bananas Foster waffle.  Oh. My. Yum.  (As I didn’t order it this time, I have no picture for you.  But isn’t this picture of eggs cute?)

Carolyn and I have gotten into a routine where we each get an entree and then split a waffle.  We got the Bananas Foster waffle the first time she took me there. Let me paint ya a little picture here.  Start with a crisp, yet buttery waffle.  Top it with some cinnamon sugar.  Then add a butter rum caramel sauce and some sliced bananas.  (I’ll wait while you wipe your mouth.)  To finish, serve with a giant scoop of vanilla bean ice cream.

I think I could stop there and everyone would be happy.  Without a doubt, this is my favorite thing they serve at the restaurant.  But it’s not the only good thing.  In fact, I don’t think I’ve ever had a bad meal there!

Today, I chose to reprise my last meal I had a few months ago, which was the A.C.E. of a B.L.T.  It’s a yummy sandwich made up of Avocado, Cheddar cheese, fried Egg, Bacon, Lettuce, and Tomato.  Get it?  So very good.

Carolyn got the Veggie Bennie Florentinie, which was a Mediterranean egg sandwich thing that was supposed to be vegetarian, but oddly included something that looked suspiciously like sausage…  Good thing her “30 days as a vegetarian” experiment was over.

We, like every time in the past, opted to split a waffle.  We went with the Bonnie O’s Espresso waffle:  a crisp waffle topped with caramel coffee sauce, chocolate dipped espresso beans, and whipped cream.  It was good, but it was no Bananas Foster waffle.

To drink, we each had coffee (mine hot, Carolyn’s iced).

Wild Eggs is such a fun place.  I wish we had one in Dayton, but I’ll just have to live with dining there when I visit Carolyn.  If you live in Louisville and haven’t tried it yet, GO!  I promise you won’t regret it.
